It's a sweet show about childhood and friendship, the characters and Doraemon in particular are extremely charming and even Gian and Suneo who often are in an antagonistic position have redeeming and sweet personalities. It's a show depicting a life worth living, I think it's the best way I can put it. The bond Doraemon and Nobita share is very enjoyable to watch. I also enjoy how the plots to this day fails or choose not to realize the difference between science fiction and fantasy, and often several of Dora's gadgets are powerful and potential world-ending black magic items they use to get things like sweets and toys. The people behind this show really have a good grasp on how kids react to things, it's pretty good.

On a more personal note, when I first began learning Japanese I read the entire run the manga had. Also it's one of the few anime I can watch comfortably without subs because the dialogues and storylines are fairly simple and straight forward.

This article is missing at least another minor character, Nobi's dad also also has a younger sister that appears in a story where Nobi and Doraemon goes back in time to see how their parents met. The neet uncle is only mentioned as uncle (he's Tamako's brother) and I think he's only in a single story (he's just there so Nobita realize how having his own apartment would enable him to do nothing the whole day, same for this episode).
For the first 10 to 12 years of the manga run there wasn't much concern on keeping track of all this characters. For example, Shizuka has (had?) a white dog that "she had all her life and loves deeply" only for it to completely disappear, I've never seen it mentioned again and it's in none of the new episodes or movies.

most obscure animes are probaly old ones that only aired on tv once between 1960-2000 or were released in vhs and only sold 200 copies sending the animation studio into bankrupcy

The further back you go in these lists the more games there are that today would only be known to older PC gamers, and perhaps only by name. Even if they were well-known and highly reviewed games for their time, and were made by full development teams, the general gaming public has never heard of them today. In the same way, many games well-known in Japan are obscure in the West and vice versa.

In the West, nearly all anime that has ever been made is obscure. The average person is laser-focused on just a handful of the really, really popular ones that everyone is talking about, and he has little to no idea about anything else. Ping pong is the biggest offender because high school doesn't matter in the show. They could've all been just hobbyists or adults and the show would play out largely the same. Gakkou gurashi is another one. Sure it takes place in a school, but the setting is largely unimportant. They could've been in pretty much any building. Just like high school of the dead, it's even in the name, but they only spend the first two episodes even in a school. The focus of these are not about school at all. Other ones you said like watamote, lucky star, zetsubou snesei, haruhi, hibike euphonium, etc. are focused centrally about the school, and the plot would be wildly different had it been set somewhere else.

It's like saying evangelion is a high school anime because shinji goes to school sometimes. Or my hero academia is about school when it's really just a battle anime.

there's one called kaiketsu zorori but the only fansubber group is some canadian furry duo that takes literally years in between releases these days, it seems they've decided to take another stab at it recently and do another season but it's probably just the usual cycle of stop subbing after a few episodes for a few more years

I'm currently watching Darkstalkers, an anime adaption of the Capcom game of the same name. I'm not saying that it's particularly hard to find about the anime but I have literally never seen anyone talk about it online even though it was made by Madhouse and the animation is of very high quality.
The same can be said about Doomed Megapolis/Teito Monogatari, another high-quality OVA from Madhouse that is among my favourites, which doesn't get a lot of appreciation online because it's deemed too edgy or something.

This has been much more common in recent years with people's obsession with the 80's, which I admit is an interest to me as well and I don't know how to feel about it.
I do think knowing Japanese gives you more credit, there's a lot things out there that I want my hands on but will never be translated, and I hate when monolinguals act like they've touched everything anime(or any medium) has to offer. I can barely grasp English, so I'll never get there.
Obscure is a loose term and you are right. And there have been anime that had notable popularity, even in the west, that are no virtually forgotten, Project A-ko comes to mind.

It is a weird one because I wouldn't call it obscure, it's based on a fighting game series from the 90's that still has a cult following now, who spawned characters that still appear everywhere now. But at the same time, a series that hasn't had a new game in more that 20 years and probably won't ever have one. The anime is well known but only in that small culture. I wouldn't call it obscure, but more niche.
Doomed Megapolis/Teito Monogatari, same story, I have it but still haven't watched it. Teito Monogatari I think is why "obscure" is a flimsy word in this case. It's virtually unknown here, but based huge hit novel series in Japan that is practically responsible for sparking an interest in the occult over there and influenced tons of media, everything from SMT to arguably Street Fighter.

Magi: The Labyrinth of Magic & Kingdom of Magic should be mandatory watching material for all denizens of Wizchan since the final season ends up taking place in a country of Wizards where normans are basically treated as cattle.

Armed Librarians: The Book of Bantorra is another really good obscure watch with plenty of wizchan attitude. There is norman stuff in it like a degree of romance and busty anime gurls but its by no means offensive or distasteful.

Two of my Top 10 favorite anime that are still great and cult classic in Greece and Saudi Arabia but obscure everywhere else (even in Japan) are Igano Kabamaru and Plawres Sanshiro:
